 S’mores Chocolate Banana Bread


Ingredients

1 ½ cups all-purpose flour

½ cup unsweetened dark cocoa powder

1 tsp baking powder

½ tsp baking soda

½ tsp salt

2 eggs

1 ½ cups mashed bananas (about 3 bananas)

½ cup granulated sugar

½ cup packed brown sugar

½ cup prune puree

½ cup chopped pitted prunes

1 tsp vanilla extract

1 cup milk chocolate chips

1 cup graham cracker cereal

1 cup mini marshmallows

Instructions

Preheat your oven to 350°F (180°C). Grease a loaf pan with flour-based baking spray.

In a large mixing bowl, sift together the flour, cocoa powder, baking powder, and baking soda. Add in the salt and whisk to combine.

Prepare the prune puree if not already done.

Mash the bananas until smooth.

In a standing mixer, whip together the mashed bananas, granulated sugar, brown sugar, and prune puree. Mix in the vanilla extract.

Gradually add the dry ingredients to the wet mixture in the standing mixer, mixing until just combined. Be careful not to overmix.

Fold in the chopped prunes, chocolate chips, graham cracker cereal, and mini marshmallows until evenly distributed.

Pour the batter into the prepared loaf pan. Bake for 1 hour. If necessary, cover with foil and bake for an additional 10 minutes, or until a toothpick inserted into the center comes out clean.

Allow the bread to cool on a wire rack.

For a s'mores topping, add extra mini marshmallows, chocolate candy bar pieces, and graham cracker cereal or crumbs on top. Briefly toast in the oven or with a kitchen torch. Enjoy!
