Ingredients:

Cake:


2 ½ cups all-purpose flour 🌾

1 ½ cups granulated sugar 🧂

1 teaspoon baking soda 🥄

1 teaspoon cocoa powder 🍫

1 teaspoon salt 🧂

2 large eggs 🥚

1 ½ cups vegetable oil 🛢️

1 cup buttermilk 🥛

2 tablespoons red food coloring 🟥

1 teaspoon vanilla extract 🍦

1 teaspoon white vinegar 🍶

Frosting:


16 oz cream cheese, softened 🧀

½ cup unsalted butter, softened 🧈

4 cups powdered sugar 🍚

1 teaspoon vanilla extract 🍦

Instructions:

Prepare the Cake:


Preheat your oven to 350°F (175°C) 🔥.

Grease and flour three 9-inch round cake pans.

In a large bowl, whisk together the flour, sugar, baking soda, cocoa powder, and salt 🥣.

In another bowl, beat the eggs, oil, buttermilk, food coloring, vanilla extract, and vinegar until well combined.

Gradually add the dry ingredients to the wet ingredients, mixing until smooth.

Bake the Cake:


Divide the batter evenly among the prepared pans.

Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean 🕒.

Let the cakes cool in the pans for 10 minutes, then remove from the pans and cool completely on wire racks 🍰.

Make the Frosting:


In a large bowl, beat the cream cheese and butter until smooth and creamy 🎛️.

Gradually add the powdered sugar and vanilla extract, beating until smooth and fluffy 🥄.

Assemble the Cake:


Place one cake layer on a serving plate and spread with frosting.

Repeat with the second and third layers, spreading frosting on each layer and the sides of the cake.

Garnish with fresh raspberries and mint leaves if desired.
